The recipe for perfect pancakes

It is on his YouTube channel that, like every Wednesday, chef Philippe Etchebest , gave us his pancake batter recipe. Light and lump-free, it made our mouths water. As Candlemas approaches , we said to ourselves that we needed to train, to be ready on D-Day. Is that an excuse to eat more pancakes ? It's obvious. What is certain is that gourmets and fine gourmets must put on their aprons, and go to the kitchen to make the chef's pancake batter!

Utensils:

  • a kitchen scale
  • a chicken ass
  • a measuring cup
  • a whip
  • a pancake pan (or crepe maker)

Ingredients for 6 people:

  • 40 g of butter
  • 4 eggs
  • 250g flour
  • 40g caster sugar
  • 60 cl of milk
  • 1 tbsp. tablespoon orange blossom water (or rum, Grand Marnier, etc.)

Preparation:

  1. Melt the butter over low heat
  2. Add the flour, eggs, sugar, a small pinch of salt and start stirring from the center.
  3. Add the milk little by little as the mixture thickens
  4. Add the butter, and continue mixing in the center
  5. Add the end of your milk and mix your preparation vigorously
  6. In case of lumps, use a small electric mixer to remove them
  7. Add your alcohol or orange blossom
  8. Let the dough rest for at least 45 minutes
  9. Make your pancakes
