Cyril Lignac's Christmas shortbread recipe

For 4 people you need:
Shortbread:
- 150g flour
- 100g ground almonds
- 50g brown sugar
- 1 tbsp. ground cinnamon
- 1 untreated orange peel
- 1 pinch of fine salt
- ½ packet of baking powder
- 3 tbsp. tablespoons of white almond purée
- 2 tbsp. almond oil
- 5 tbsp. milk
- Flour for the countertop
Icing:
- 60g icing sugar
- 1 lemon juice
Utensils:
- 1 baking sheet + 1 silicone sheet
- stainless steel or plastic cookie cutters in the shape of a fir tree, star, reindeer…stamp with Christmas design
- 1 spatula1 plastic bag without tip
The preparation steps:
- In a bowl, pour the flour, ground almonds, sugar, baking powder, salt, cinnamon and grated orange zest. Mix. Add the almond oil and the almond puree. Mix again. Form like a powder and add the milk to make a ball.
- Flour your work surface and roll out your dough, form the designs you want using cookie cutters. Place the cookies on the baking sheet lined with parchment paper. Bake at 180°C for 10 minutes. Take out the shortbread and leave to cool.
- Mix the lemon juice with the icing sugar to obtain the icing, pour into the pocket. Decorate the cookies.
