Raised

A beetroot soup with Labetterave pink berries provides vitamin C and also magnesium, essential to avoid sluggishness. Parsnips contain antioxidants that boost the immune system. For 4 people, sauté 1/2 onion, 1 tbsp. at s. pink peppercorns and 2 tbsp. c. of salt in 1 tbsp. at s. olive oil. Steam 2 small beets and 2 small carrots for 25 min. Pour them into the onion mixture. Add 3 large glasses of water and rice milk. Cook for 30 minutes, then mix.

Explosive

A hodgepodge of cabbage with pear. A starter that contains both vitamins, with 1/2 romanesco cabbage and 2 comice pears, and antioxidants, with red cabbage. For 4 people, steam the Romanesco cabbage for 7 minutes. Run it under cold water. Mix it with a few strips of raw red cabbage, pears cut into small cubes, 1 handful of sunflower seeds and a little grated fresh ginger. Season with the mixture:1/2 squeezed lemon, 1/2 soy yogurt, 1 tbsp. c. eucalyptus honey, 1 tbsp. c. olive oil and salt.

Gourmet

A lemon matcha cream. Obviously, the lemon is to be preferred, because it provides vitamin C and has antiseptic properties. With a little honey, with antioxidant and antibacterial properties, it's even better. For 1 person, mix 2 soy yogurts with 1 tbsp. c. lemon juice, 1 tbsp. c. runny honey and 1/2 tsp. tsp matcha powder. Serve chilled.

Rich

A turmeric risotto. Turmeric boosts the body's defences... In this recipe for 4 people, we cook 4 times at the same time. First of all 250 g of brown round rice in 1.5 l of water for 15 min. Then steam 1 butternut squash for 10 min. In another saucepan, 0.5 l of rice milk, 1 tbsp. c. turmeric powder, 1 tbsp. c. of olive oil with 1 tbsp. c. salt. And in a skillet, 2 onions with 1 tbsp. at s. olive oil, 1 tbsp. c. soy sauce and 1 tbsp. c. honey. Mix the last 3 preparations. We mix the result with the rice.

Thirst-quenching

A kale smoothie. Kale is a vegetable that looks like kale. It contains more vitamin C than an orange. As we do not have to cook it, we incorporate it as it is into a smoothie, just to boost ourselves. For a large glass, mix together 1/4 kale branch without the stem, 1/2 banana, 1 peeled kiwi and 1/2 glass of apple juice. If you like to drink cold, you can add 2 to 3 ice cubes.
