Homemade pastry flan recipe like my grandmother

The pastry flan is one of the traditional grandmother's desserts, known to all gourmets and appreciated by most of us for its simplicity, its nourishing qualities, its vanilla flavor and its ease of consumption in all circumstances without risk putting crumbs everywhere.

Ingredients for pastry flan

What do you need to gather to start cooking a pastry flan? The ingredient list is simple and consists of basic products only. The flavor can vary and the vanilla replaced by 1 tablespoon of orange blossom water for example. As for the shortcrust pastry, nothing prevents you from making it yourself (flour, butter, salt, water), but if you buy it already ready, to unroll, be sure to choose it "pure butter" so as not to it is made with vegetable oils such as palm oil.

  • 1 liter of organic whole milk
  • 4 organic eggs
  • 140 g cane sugar
  • 90g cornstarch
  • 1 vanilla pod
  • 1 shortcrust pastry with butter

Preparation

Heat the milk with the vanilla pod.

Meanwhile, in a bowl, mix the cornstarch, sugar and eggs. When the milk boils, remove the vanilla pod, and pour into the bowl while whisking vigorously so that the cream is homogeneous. Cook over low heat until thickened.

Line a pie dish with the shortcrust pastry and pour the flan cream into it. If you want to make a fruit flan, you should add them before pouring the cream:strawberries, raspberries, apricots, prunes...

Put in the oven previously heated to 180°C (Th.6) for 30 to 40 minutes, until it browns a little in places.
