Big Mamma truffle pasta:the divine recipe from the Parisian restaurant

Big Mamma's truffle pasta recipe

Ingredients for 4 people:

  • 400 g mafaldine or linguine
  • 70 g parmesan cheese
  • 20g butter
  • 2 tbsp. at s. truffle oil
  • 1/2 shallot
  • 1 truffle of 20 g
  • 200 g button mushrooms
  • 3 cl of white wine
  • 80 g mascarpone

Preparation steps

  1. Prepare the truffle cream:melt 20 g of butter with 2 tbsp. at s. of truffle oil in a sauté pan.
  2. Add 1/2 shallot and half of a 20g chopped truffle, then 200g sliced ​​button mushrooms. Leave to brown for a few minutes, then deglaze with 3 cl of white wine, stirring with a wooden spatula to loosen all the juices. Cook over low heat for 10 minutes. Mix.
  3. In a saucepan, cook 400 g of mafaldine or linguine a little less than al dente in salted boiling water.
  4. Mix 80 g of mascarpone with the truffle cream in a saucepan and heat gently. Add the pasta, 70 g grated parmesan and a little cooking water, if necessary.
  5. Serve and grate the rest of the truffle over the plates.
