After having tasted frangipane at every meal, during the month of January, with the galette des Rois, February welcomes us with a dessert that we really like:pancakes! With sugar or spread, out of the question to miss Candlemas! This is the perfect time to get together with friends or family, to awaken your taste buds with succulent pancakes . However, this year, we're going for originality, opting for the pancake cake . Create a stack, spread with cream, chocolate or fruit, and share a delicious and divinely indulgent cake!

How to make a pancake cake according to Hélène Darroze?

Ingredients:

  • Crepes
  • 2.5 tsp matcha tea powder
  • 50 cl of milk
  • 2 eggs + 3 egg yolks
  • 200g flour
  • 40g icing sugar
  • 60 g melted butter
  • Lemon cream
  • 35 cl whipping cream
  • 80g icing sugar
  • Zest of 1 organic lemon
  • 500g mascarpone

Steps for preparing Hélène Darroze's crepe cake

  1. Whisk down 2.5 tbsp. c. of matcha tea powder in 50 cl of milk. With a whisk, add 2 eggs + 3 egg yolks. In a bowl, mix 200 g of flour and 40 g of icing sugar. Pour the matcha milk in the center. Whisk everything, add 60 g of melted butter. Refrigerate for 1 hour.
  2. Bake a dozen pancakes.
  3. Mix 35 cl of whipping cream, 80 g of icing sugar and the zest of 1 organic lemon. Gradually pour over 500 g of mascarpone and whisk everything together. Book 2 hours in the fridge.
  4. Whisk the cream.
  5. Assemble the cake by interspersing pancakes and layers of lemon cream. Sprinkle with matcha powder and serve, optionally, with matcha custard.
